Sledzie (Polish Herring)

Description: Herring has been around as a staple polish dish since Medieval times. Poland surrounded by the Baltic sea is able to have access to have a huge supply to this saltwater fish. It is a very common fish to have in a dish during lent, where the Roman Catholics can’t have meat as well as Christmas Eve dinner in Polna called, Wigilia where there is also not supposed to be any meat.

Ingredients:
6-8 herring
2 tbs of olive oil per herring
2 onions
milk (to soak herring)
lemon
Directions:
Soak herring in a bowl filled with milk for 24 hours.
Take out the herring out of the bowl and rinse them.
Prepare a glass jar.
Chop the onion into small pieces.
Put one herring in the jar. Then top with 2 tbs olive and some onions and a few squirts of lemon. Repeat with each herring until jar is layered with them.
Wait 24 more hours and then serve.
