Ogorkowa Zupa (Pickle Soup)

Description: Pickle soup, as strange as it sounds can be a very tasty Polish meal that is quite simple to make. It’s got a bit of a sour taste but it is an amazing dish for all pickle lovers that is made with Polish dill pickles. Polish pickles are not much different from Jewish kosher dill pickles. They just differ in the way they are seasoned. They are a bit sour and are often kept in wooden barrels. Other sweeter Polish pickles are often kept in jars.

Ingredients:

1 jar of dill pickles

7 potatoes

5 carrots

3-5 tbs of sour cream

salt pepper

Directions:

  1. Bring a medium sized pot of water to boil.

  2. Using a cheese grater, grate 1 jar of dill pickles into a bowl.

  3. Peel skin off carrots and chop off ends. Then above pickle bowl grate in carrots.

  4. Peel off skin on potatoes. Then chop into dice size pieces on a cutting board and add to bowl with carrots and pickles.

  5. Add bowl of ingredients into boiling water.

  6. Allow soup to cook for 1-2 hours.

  7. When ingredients have softened, near the end of the cooking time add in 3-5 tbs of sour cream.

  8. Season with salt and pepper based on preference of flavor.

  9. Now you can either serve the soup and eat it as it is or put it in the fridge for one day to make the soup more sour.
