Nalesniki z Serem (Polish Crepes with Cheese)

Description: Crepes are common to almost all of Europe. You have probably heard about famous crepes in France, Spain, and Sweden. All European countries crepes have their own unique flavor of filling and thickness of dough . Poland’s crepes are known to be sweet and very thin. They are often served as a main dish with or without sour cream and sugar.
Ingredients for Batter:
1.5 cups of Milk
1 cup of Flour
2 eggs
2 tbs sugar
1 tbs melted butter
Ingredients for Filling:
1.5 cups of Farmers Cheese
1 egg yolk
1 tsp vanilla extract
1 tbs sugar
orange/lemon zest
Optional Sour Cream mixed with Sugar
Directions:
Combine milk, flour, eggs, sugar and butter in a medium sized bowl. Mix well, don’t leave any flour at the bottom of the bowl.
Cover with paper towel and allow the batter to rest in room temperature for ½ an hour.
In a medium sized frying pan heat oil and poor in a couple of spoons of batter until bottom of pan is covered in batter. Heat batter until one side is golden brown and then flip and do the same on the other side.
Next combine farmers cheese, egg yolk, vanilla extract, and zest in a small bowl. This will be filling for the crepes.
Put 3 tbs of filling in each crepe and then roll filling into crepe.
Now you may serve with sour cream and sugar if you wish.
